Compromise is not a word that fits into the Peugeot vocabulary. For each spice, there is one and only one Peugeot grinding mechanism: peppercorns; coarse dry salt; chilies; herbs and spices; wet salts; and nutmeg. Add the coffee mechanism, which started it all, and there are seven unique Peugeot mechanisms. Each is designed to derive the most flavor and greatest aroma from its complementary spice. Chef Olivier Roellinger: awarded 3 Michelin Stars and renowned for his expertise in spices and seasoning, wanted a mill that would provide the flexibility and versatility he needed to create fresh, custom grinds each time. His first choice: Peugeot. Together, they designed his namesake mill with the features he required: an easy-access reservoir, allowing you to grind a full hopper of peppers or only one peppercorn at a time; a hollowed drawer cavity that would allow access to all the spice that had been ground; and the ability to grind directly into a bowl or on the food. The designer took it one step further, paying homage not only to the traditional Peugeot coffee mill, but also to Chef Roellingers other passion sailing. The crank handle and drawer pull are both inspired by winch handles ion sailboats. The grind is fully adjustable: lift the spring tab and turn the thumbwheel to adjust the grind (clockwise for finer grinds, counter-clockwise for coarser grinds). The spring tab ensures the grind setting does not adjust itself. Mill is 5-1/4-inches tall with a black matte finish.
